Since he was a child, the lively and intuitive Fabrizio Polli has known how to value the richness of his territory with an awareness that was key to his choices and his growth

In 1984 he joined Suinicola Gen-Ma, a cooperative of breeders and butchers with strong ties to the history and tradition of Genga. It was thanks to this path and to his training that the knowledge he acquired and his direct contact with this special reality transformed into a great passion.

In 2000, the Polli family, gathering and taking advantage of 30 years of experience, decided to give life to an entrepreneurial dream the Salumificio di Genga

In 2006 their first factory was inaugurated which was a decisive step towards the conquest of a market becoming increasingly vaster.

In 2017 the production plant was expanded and BIO (organic) certification was obtained, making it a year with excellent results.

The new generation is now the face of the company: custodians of a tradition with their eye on the future.

In 2018 the salami factory was enriched with the technical and professional competence of Matteo and Giacomo. A lot of energy and innovative ideas were merged with the values of the Polli family, to allow them to continue, using both new and old tools, a project which was becoming increasingly more ambitious.
